Tasting Notes
MC² pours with an intensely aromatic nose of ripe mango, passionfruit, and fresh citrus peel, characteristic of Equilibrium's heavily dry-hopped, hazy double IPA house style. The flavor follows through with a full, almost juice-like hop expression — tropical fruit forward with a soft underlying sweetness from the malt base that keeps the bitterness restrained. The body is substantial and pillowy, with a smooth, slightly oily texture common to the New England double IPA format. The finish is relatively clean given the weight, with lingering fruit and just enough warmth from the alcohol to remind you where you are.
About the Brewery
Equilibrium Brewery is based in Middletown, New York, and has built a strong reputation in the Northeast craft beer scene with a near-exclusive focus on hazy, hop-forward IPAs and double IPAs. Their beers are often named with physics and mathematics themes, and they've developed a devoted following for consistently producing soft, fruit-saturated hop bombs with polished execution. They operate a taproom that draws significant weekend traffic and release small-batch cans that move quickly through distribution.
Food Pairings
Spicy Thai or Vietnamese dishes work well here because the beer's fruit-forward sweetness tempers heat without disappearing under bold flavors. A rich, creamy brie or triple-cream cheese complements the soft body and lets the tropical hop character read as a contrast rather than a clash. Grilled shrimp tacos with mango salsa mirror the beer's fruit notes in a way that feels cohesive rather than redundant. Fried chicken — especially with a hot honey or citrus glaze — stands up to the beer's weight while playing off its hop brightness.
Style Guide
American Double or Imperial IPAs take the hop-forward character of a standard American IPA and push the malt base and dry-hop load higher, typically landing between 7.5% and 10% ABV with intensified bitterness or fruit aroma depending on the approach. The style emerged from American craft brewing in the early 2000s as brewers tested how far hop character could be amplified before balance broke down. The New England or hazy variant of the style, which MC² fits into, prioritizes soft bitterness and aromatic tropical or citrus hops over the resinous, aggressively bitter West Coast version. Compared to a standard IPA, the double format is fuller-bodied, more aromatic, and noticeably warmer in the glass.
