Tasting Notes
The aroma leads with resinous pine and citrus peel, backed by a mild biscuit malt base that keeps things grounded. On the palate, grapefruit and orange zest dominate with a firm but not aggressive bitterness, and the malt body provides just enough sweetness to balance without going soft. The finish is dry and moderately bitter, with the hop character lingering in a clean, assertive way. It's a solid, well-calibrated example of the West Coast American IPA format.
About the Brewery
Hopworks is based in Portland, Oregon, and has operated as one of the Pacific Northwest's notable organic-focused craft breweries since around 2008. They built their reputation on sustainability — certified organic ingredients and environmentally conscious brewing practices are central to their identity. Their lineup leans hop-forward, which makes sense given the region, but they maintain a range of styles across their taprooms and distribution footprint.
Food Pairings
Burgers and grilled beef work well here because the resinous bitterness cuts through fat and char in equal measure. Fish tacos pair naturally since citrus hop notes mirror lime and salsa without competing. Aged cheddar or sharp white cheddar holds up to the bitterness and finds common ground with the malt backbone. Spicy Thai or Mexican dishes benefit from the bitterness acting as a counterpoint to heat rather than amplifying it.
Style Guide
The American IPA is defined by prominent hop character — typically citrus, pine, or tropical fruit aromas — with a supporting malt body that stays restrained enough to keep hops in focus. It originated from British IPA traditions but was reinterpreted by American craft brewers in the 1980s and 90s, particularly on the West Coast, where high-alpha hops like Cascade and Centennial became signatures. It sits between a session ale and a double IPA in both bitterness and alcohol, and distinguishes itself from the hazy New England IPA by favoring clarity, dryness, and firm bitterness over soft, juicy sweetness.
