Tasting Notes
PsycHOPathy leads with assertive citrus and tropical hop aromas — think grapefruit pith, mango, and a hint of pine resin. On the palate, the bitterness is firm but not punishing, with a solid malt backbone that keeps things grounded without going sweet. The body is medium, which gives the hops room to move without feeling watery. The finish is dry and moderately bitter, with the citrus notes lingering longest.
About the Brewery
Madtree Brewing is based in Cincinnati, Ohio, and was one of the city's early craft brewery success stories when it opened in 2013. They're known for driving Cincinnati's craft beer scene forward, particularly with their taproom in the Oakley neighborhood. PsycHOPathy has been a flagship product for them, helping establish their reputation for hop-forward beers. Their lineup spans a range of styles, but IPAs remain central to their identity.
Food Pairings
The firm bitterness and citrus character here work well with spicy Thai or Indian dishes, where the hops echo the heat and cut through rich coconut-based sauces. A classic cheeseburger pairs naturally because the malt backbone meets the beef while the hops slice through the fat. Sharp cheddar or aged gouda can match the beer's intensity without being overwhelmed. Fish tacos with a lime-forward slaw are a natural companion, playing off the citrus notes directly.
Style Guide
The American IPA is defined by pronounced hop bitterness, aroma, and flavor — typically showcasing American hop varieties that lean toward citrus, pine, and tropical fruit. It emerged as a distinctly American riff on the British IPA tradition, dialing up the hop intensity and pairing it with a cleaner, more neutral malt base. ABVs generally run from about 6 to 7.5 percent, keeping the beer substantial but drinkable. It sits between the more restrained English IPA and the hazy, softer New England IPA, landing firmly in the assertive-and-clear camp.
