Tasting Notes
Total Domination leads with a assertive hop aroma of pine resin, citrus peel, and a faint tropical undercurrent. On the palate, the bitterness is firm but not aggressive, backed by a light caramel malt sweetness that keeps things grounded. The body is medium, finishing dry with lingering pine and a mild citrus bite. It's a straightforward West Coast-leaning IPA that doesn't overcomplicate itself.
About the Brewery
Ninkasi Brewing is based in Eugene, Oregon, founded in 2006. Named after the Sumerian goddess of fermentation, the brewery grew quickly into one of the Pacific Northwest's larger regional craft operations. Total Domination is their flagship and the beer most people associate with the brand. Their lineup spans approachable session beers through bigger hoppy offerings, with a consistent focus on Pacific Northwest hop character.
Food Pairings
Spicy fish tacos work well here because the citrus and pine hops cut through the heat and complement lime-forward toppings. A sharp cheddar burger holds up to the bitterness without being overwhelmed. Grilled chicken with herb seasoning lets the hop aromatics do the heavy lifting. Aged gouda echoes the beer's mild caramel malt sweetness while the fat in the cheese softens the bitterness.
Style Guide
The American IPA is defined by assertive hop bitterness and aroma — typically pine, citrus, and resin — derived from American hop varieties like Cascade, Centennial, and Chinook. It emerged from the craft beer movement in the 1980s and 90s, particularly on the West Coast, as brewers pushed beyond the restrained hopping of traditional English IPAs. Compared to a Double IPA, it carries moderate rather than extreme bitterness and alcohol, and unlike a hazy New England IPA it generally pours clear with a drier, more bittering finish.
