Tasting Notes

Born & Raised leads with pine resin and citrus peel on the nose, carrying through to a palate that leans firmly bitter with notes of grapefruit and a touch of tropical fruit underneath. The body is medium, firm enough to carry the hop load without feeling heavy, and the malt backbone stays quietly supportive rather than sweet. The finish is long and dry with a lingering bitterness that defines the beer more than any fruit-forward softness.

About the Brewery

No-Li Brewhouse is based in Spokane, Washington, and has been a significant presence in the Inland Northwest craft beer scene since around 2012, operating out of a brewery and restaurant on the Spokane River. They built their reputation on hop-forward Pacific Northwest ales, with Born & Raised serving as their flagship and a regional identity statement. Their lineup reflects the West Coast tradition of assertive, resinous IPAs alongside seasonal and experimental offerings.

Food Pairings

Burgers with sharp cheddar work well because the resinous bitterness cuts through fat and the malt holds its own against the char. Spicy chicken wings find a match in the citrus notes, which mirror heat without amplifying it. A sharp aged cheddar or Manchego on a cheese board plays off the pine and grapefruit in the hops. Fish tacos with a lime-heavy slaw echo the citrus character and keep the pairing bright without clashing.

Style Guide

American IPA is defined by assertive hop bitterness, aroma, and flavor derived primarily from American hop varieties — think citrus, pine, and increasingly tropical fruit — balanced by a supportive but not prominent malt base. The style emerged from the broader IPA tradition but diverged sharply from its English roots in the 1980s and 1990s as West Coast American brewers pushed bitterness and dry-hop aroma to the forefront. It typically runs between 6% and 7.5% ABV and distinguishes itself from Double IPAs by restraint in alcohol and body, and from hazy New England IPAs by its dry finish and clarity.
