Tasting Notes

The aroma leads with fresh-roasted coffee and dark chocolate, backed by a mild earthiness from the stout base. On the palate, bitter espresso and cocoa dominate, with a subtle sweetness that keeps it from tipping into harsh territory. The body is medium to full, coating without being syrupy. The finish is long and roasty, with lingering coffee bitterness that fades cleanly.

About the Brewery

Schlafly is based in St. Louis, Missouri, and was founded in 1991 as one of the first craft breweries in the state. They operate out of the Tap Room in downtown St. Louis and a second location in Maplewood. Known for a wide, rotating lineup that spans traditional styles and seasonal releases, they've been a consistent anchor of the Midwest craft scene for over three decades.

Food Pairings

A burger with sharp cheddar works well because the roasty bitterness cuts through the fat and mirrors the char on the meat. Dark chocolate desserts — brownies, flourless cake — echo the cocoa notes without competing. Barbecued brisket pairs naturally because smoke and coffee share overlapping bitter, earthy tones. Aged gouda offers a nutty sweetness that softens the coffee edge and creates a back-and-forth contrast.

Style Guide

American Stout is a hop-forward take on the stout tradition, distinguishing itself from its Irish and English cousins by leaning more aggressively on roasted malts and American hops. Expect dark-roasted grain character — coffee, dark chocolate, sometimes a faint char — with more bitterness than a dry Irish stout and less sweetness than a milk stout. ABV typically lands in the 5–7% range, making it substantial without the intensity of an imperial. The style grew out of the American craft movement in the 1980s and 90s as brewers pushed classic dark ale templates toward bolder, more bitter expressions.
