Tasting Notes
HopDevil leads with a resinous, piney hop aroma backed by some citrus peel and a touch of earthiness. On the palate, the bitterness is assertive but balanced — there's a solid malt backbone that keeps it from turning harsh, with flavors of caramel grain, grapefruit rind, and pine resin. The body is medium, substantial enough to carry the hop load without feeling heavy. The finish is dry and lingering, with bitterness that fades slowly.
About the Brewery
Victory Brewing Company is based in Downingtown, Pennsylvania, founded in 1996 by Bill Covaleski and Ron Barchet, two childhood friends who met on a school bus and later trained in brewing craft. They built a reputation as one of the anchor breweries of the East Coast craft scene, known for straddling German brewing traditions and American hop-forward styles. HopDevil was one of their flagship releases and helped establish their identity early on.
Food Pairings
Grilled burgers work well here because the char and fat stand up to the assertive bitterness without being overwhelmed. Spicy dishes like Buffalo wings find a counterpoint in the malt backbone, which softens some of the heat. Sharp aged cheddar echoes the beer's resinous, slightly earthy tones. A hearty grain bowl with roasted vegetables holds its own against the hop intensity while letting the malt character come forward.
Style Guide
American IPA is defined by prominent hop bitterness, aroma, and flavor — typically showcasing citrus, pine, and resin from American hop varieties — balanced against a moderate but present malt base. The style evolved from English India Pale Ale traditions but diverged sharply in the American craft brewing movement of the 1980s and 1990s, leaning harder on aggressive late-hop additions and dry-hopping. It sits between the more restrained English IPA and the more intensely aromatic New England IPA, generally finishing dry and bitter rather than hazy and juicy.
