Lambic refermented on whole fruit — cherries for kriek, raspberries for framboise. Traditional versions are bone-dry and sharply tart, the fruit folded into lambic's wild, funky depth; many commercial versions are instead back-sweetened into something far softer. The label distinction matters. Usually 4–7%.
