The champagne of the lambic world: young and old spontaneously fermented lambics blended and refermented in the bottle. Bone-dry and sharply tart, with lemon, oak, and barnyard funk from the wild yeast of Belgium's Senne valley. Usually 5–8%, and it ages for decades.
