Raw, spontaneously fermented wheat beer from Brussels and the Pajottenland, aged in barrels and served still or nearly so — traditionally young, from the cask, in local cafés. Dry, tart, and funky without gueuze's sparkle or polish. Rarely seen outside Belgium; an acquired and rewarding taste.
