Tasting Notes
Mirror Pond opens with a clean, resinous hop aroma — pine and a touch of citrus zest — built on a pale malt base that stays firmly in the background. On the palate it's moderately bitter with a light-to-medium body, delivering biscuity malt alongside the hop character without either overwhelming the other. The finish is dry and hop-forward but not aggressive, the kind of balance that made American pale ales a gateway style for a generation of craft beer drinkers.
About the Brewery
Deschutes Brewery was founded in 1988 in Bend, Oregon, initially as a brewpub before growing into one of the larger craft operations in the Pacific Northwest. They're best known for Mirror Pond, Black Butte Porter, and the Jubelale winter seasonal, and their lineup has long leaned on clean execution and consistency over novelty. Deschutes has remained employee-friendly and regionally rooted even as distribution expanded nationally.
Food Pairings
Mirror Pond's moderate hop bitterness and light malt body work well alongside grilled salmon, where the pine-resin character echoes the char without fighting the fish's richness. Fish tacos with a lime crema get a complementary citrus nudge from the hop profile. A burger with sharp cheddar benefits from the beer's bitterness cutting through fat. Roasted chicken with herbs is mild enough not to overpower the beer while giving the malt something to engage with.
Style Guide
American Pale Ale sits between a session beer and an IPA in bitterness and hop intensity, typically landing in the 4.5–6% ABV range with a clean, accessible malt backbone. The style was shaped in large part by Sierra Nevada's Pale Ale in the early 1980s, which introduced American craft drinkers to assertive domestic and West Coast hop varieties. Compared to an IPA, an APA carries noticeably less bitterness and hop concentration; compared to an English pale ale, it swaps earthy, earthy character for brighter, more resinous American hop varieties.
