Tasting Notes
Mind Haze leads with a wave of tropical and citrus aromatics — think ripe mango, tangerine, and a hint of stone fruit — characteristic of heavily dry-hopped New England IPAs. On the palate it's soft and pillowy with low bitterness, letting the juicy hop character take center stage rather than any sharp resinous bite. The body is medium and slightly creamy, a hallmark of the style's oat-and-wheat malt bill. The finish is relatively clean and short, fading on a gentle citrus note rather than lingering bitterness.
About the Brewery
Firestone Walker is based in Paso Robles, California, founded in 1996 by Adam Firestone and David Walker. The brewery built its reputation on British-influenced ales fermented in oak barrels, particularly its Union Jack IPA and the acclaimed Parabola and Sucaba barrel-aged series. Over time it expanded into a broad range covering lagers, hazy IPAs, and sour ales, and it operates a strong pub and blending house presence across California.
Food Pairings
The soft tropical hop character here pairs well with spicy Thai green curry, where the juicy fruit notes cool the heat without clashing. Fish tacos with mango salsa echo the beer's citrus-forward profile in a complementary way. A fresh burrata with peach and basil plays off the stone fruit aromatics without overwhelming the delicate body. New England IPA — sometimes called hazy IPA — is defined by its intentionally cloudy appearance, soft and pillowy body, and intensely juicy hop aroma with minimal perceived bitterness. It originated in Vermont in the early 2010s, largely popularized by The Alchemist's Heady Topper, and spread rapidly across American craft brewing. Unlike West Coast IPAs, which emphasize clean bitterness and resinous pine, NEIPAs rely on late and dry hopping to maximize aroma and use oats or wheat to achieve a fuller, smoother mouthfeel.
