The umbrella for all bottom-fermented beer. Cold fermentation and extended cold conditioning produce clean, smooth flavors with little yeast character, putting malt and hops in plain view. The family runs from pale pilsners to black schwarzbiers; beers land under this catch-all when nothing narrower is specified.
